Wild Blueberry Nice Cream

Nice cream is a total life saver. Seriously.

Everyone has happy childhood memories attached to ice cream, so when were told that we shouldn't eat it anymore for whatever reason, it is a real bummer!

But then... Nice cream happened and it started saving lives. I'm kind of joking, but actually i'm kind of serious because the dairy and sugar regular ice cream feeds disease and nice cream doesn't. Actually it kills many pathogens that cause various diseases! 

So I give you full permission to eat nice cream for breakfast, lunch, or dinner, or all of the above! And once you try it, you'll want to eat it all day everyday! 

This nice cream is super simple, extremely healing, filled with antioxidants, and it tastes delicious! Here's the recipe.

2 Servings

Ingredients

4 Frozen Bananas

2 Cups of Frozen Wild Blueberries

Splash of water or coconut water (optional) 

Date Roll Pieces (optional topping)

Coconut Shreds (optional topping) 

Directions

Freeze bananas overnight or for at least 8 hours. 

When the bananas are frozen, take them out of the refrigerator and let thaw for 10-15 minutes. 

Cut the frozen bananas into 2-inch pieces and place in a food processor or high speed blender. 

Add the 2 cups of frozen wild blueberries to the food processor and blend. 

If the nice cream is really thick and having a hard time blending add a splash of water or coconut water to get it moving better. 

Once the bananas and blueberries are fully combined and the nice cream has a thick and smooth consistency, scoop it out into a bowl and enjoy!

You can add toppings if you'd like, for this I added date roll pieces and coconut flakes.
